Book Z Metaphysics Aristotle tells us that substance can is four things; the essence of the individual, the universal, the genus, and the underlying subject (1029a, for those interested in reading). He says that the subject is the substance in the highest degree. Earlier (I can't remember if it was here or in the Physics) he says this is because you cannot basically you have to have the subject to predicate anything. Quanity and quality and all of that is contingent on there being a subject. Anyway, Aristotle says a lot. I suggest to wrestle with the texts. There is no easy way around Aristotle.
