Not everything is a phallus. For example, a claw is not a phallus. In the history of medical curiosities, there has never been, to my knowledge, a phallus that was cleft in two, able to grip, or made of chitin shell possessed of serrated edges.
The claws represent a reduction of the crab as its' essentials; mute and unthinking; unknowing, existing only to procure for itself food, procuring food only to exist. Had Prufrock's soul been incarnated as a crab he wouldn't need to suffer cognition and all its' trappings. This is what Prufrock wants.
