I'm not sure the significance is that they are "slimy", but that they are gross and unappealing. When the mariner blesses these slimy creatures, the albatross slips off from him and falls amidst the slimy creatures. I wonder if that means we're suppose to love all of nature (albatross flies high...representing one end of nature's spectrum and these slimy creatures are in the sea, which represents another end of its spectrum). I don't know. Just something to think about.
